Belgian Endives Are In Season!
And it's only in season for a few months, so it is a great time to try something different and bring some change on the table.
When you diversify your diet, you get exposed to different nutrients, don't get bored with the same foods over and over again.
So go ahead, , be adventurous, discover new flavors, open your palate to new experiences and by doing so you get the ones around you, and especially children, open to different tastes.
Belgian endives are rich in magnesium, phosphorus, potassium, calcium, manganese, copper vitamin B and C; it is also low calorie.
They can be consummed raw in salad or cooked.
The season is not very long so it's a good oportunity to taste different flavors.
Also, when you go seasonal you get seasonal prices and help environement by not buying foods that flew in from the other side of the planet.
I like to say to children or bigger children who are exposed to something new that they never tried before: you don't have to like it, just try it !

This belgian endive salad is pretty easy and can be declined in different flavors:
- belgium endive
- mixed greens -alt.: radicchio
- beets: it can be any color
- walnuts alt.: pecans
- gorgonzola cheese alt.: blue cheese, goat cheese or emmentaler
- apples alt.: pears
You can make it a full dish by adding hard boiled eggs
Dressing: olive oil, white balsamic vinegar, chopped parsley salt and pepper
Now you have at least 4 different salads to diversify the flavors. You do not have to mix all of the ingredients, this salad is still delicious without the beets or nuts if you are allergic to them.
What really matters is that you give yourself opportunities to try something different and don't get bored with your vegetables.
