Food Allergy Awareness Week

As we are beginning this food allergy awareness week, I would like to reach out to those of you who do NOT have a food allergy and enjoy dining out.
There’s nothing like going out to the restaurant with some friends after a long week…. sit back, relax and enjoy the moment. When you have a food allergy, you literally put your life in someone else’s hands and that makes things a little different.
Now you’ll tell me and what does that have to do with those of us who do not have an allergy? Well, way more than you think and it all starts when you order your food with the changes you request on the various dishes you want.
Your waiter/waitress would do just about ANYTHING to get a good tip. If you have a special request, don’t lie. You don’t have to explain your life, admit you are on a diet or feel uncomfortable with your special requests, simply ask for it.
When you let the server think you do not want a specific ingredient from a dish because of an allergy you do not have, the consequences are higher than you think:
1st:people really believe what you tell them and the kitchen staff will dedicate more time, a specific area and person aside to make sure you are safe
2nd: since you are not the first one, but hopefully the last, to call on an allergy to have that special request fulfilled, no allergic reaction will ever occur and at some point the kitchen might just simply disregard those requests, considering that nothing never happens and eventually paying less attention to those requests, including those from “real” allergic people.
3rd: it’s ok to be picky, you don’t have to like everything and justify yourself about that, that’s your personal tastes and it’s different from a food allergy. I’m a personal chef, my favorite dish to cook is what will make my clients happy, so their likes and dislikes is an obvious consideration ;) People don’t like the same things, which makes my job way more fun!
4th: if you’re on a diet or need to pay attention to your diet, health for whatever reason, just say you don’t want that sauce, no need to justify yourself, after all we live in the kingdom of the customer service!
If you work as a front of the house staff, don’t push people or make them feel bad about their specific request, you don’t know what’s going on in their life.
If that customer has a food allergy, trust me, they will let you know right away because this can be life or death issue. Don’t ask them if they don’t want an ingredient because they are allergic, chances are, they will say yes to make sure you comply with their request. Just ask if it’s for personal preferences.
If you mention it will take more time to make the dish because of that allergy for the simple reason that there are specific procedures in the kitchen regarding food allergies, then 2 things might happen: this is not an allergy and the person will just ask you to leave it on the side, or, this is REALLY an allergy and there will not be ANY problem because allergic people UNDERSTAND and are OK to wait a little longer for their own sake.
Why? Because a food allergy can kill you. Life with food allergies can be compared to living with a handicap without being in a wheelchair: it does not show but the risks are present and your daily life has to be adjusted.
Educating people about food allergies is important whether you have a food allergy or not
So, PLEASE, PLEASE, PLEASE, if you do not have an allergy, do not say you do and ask people around you to do so as well.
One last thing: my son almost died in my arms at age 2. This is how we found out about his allergies and how serious it can be. Think about that next time you order so that everybody can enjoy!
